Update examples to align with the IG constraints and supported data elements

The examples for Organization, Location and HealthcareService need to be updated to ensure that the sample data comply with the IG constraints and value set binding.

For example, Location.type is marked as a gap in the mapping, and no binding is specified. But the example populates this data element with v3-RoleCode of Community Service Center. Simiarly, Location.telecom.contactpoint-availabletime is marked as a gap in HSDS mapping no source is specified for this optional data element. But the example has data in this data element.
