FHIR-16422 Patient: Remove animal from "scope and usage" description

Description

The patient content section still says: "Demographics and other administrative information about an individual or animal receiving care or other health-related services".

In the light of the fact that the animal part of the specification has been moved to an extension, it should be clarified that the base Patient resource is NOT about animals.
